Chicken and Vegetable Curry

This recipe is sure to give your lips some tingle! You can make this recipe with shrimp or pork, and substitute other vegetables you desire. The spices featured in this recipe can be bought at any major grocery stores; I got mine from the seasoning section at Bel Air.

INGREDIENTS:
4 tbsp olive oil
4 gloves garlic, minced
1 small yellow onion, chopped
1 lb chicken breasts, cubed
2 tbsp curry powder
1 tsp ground turmeric
1 tsp ground cinnamon, or 3" stick
1 tsp crushed pepper or cayenne powder
pinch of salt and pepper
3/4 cup chicken broth
1 cup coconut milk
1 small red bell pepper, diced
1 medium carrot, sliced
2 small potatoes, diced
1 small can sweet peas
1 tbsp ginger paste
1 tsp garam masala
1/2 cup fresh cilantro, chopped

Yields 7-8 servings

Preparation Time: 15 minutes
Cooking Time: 20 minutes

Shrimp Scampi

This recipe is so easy!! You can buy the shrimp already peeled and deveined if you prefer ;) You can serve the scampi as an appetizer, over steamed rice or any cooked pasta you prefer. Try this recipe with scallops; it is just as equally delicious :)

INGREDIENTS:
3 tbsp olive oil
1/4 cup butter (unsalted)
6 cloves garlic, minced
1 tbsp lemon zest
3 tbsp lemon juice
1/2 lb shrimp, peeled and deveined
1/4 cup fresh parsley, chopped
1/4 cup white wine (optional)

Optional ingredients for quick, one pot pasta dish!
1 1/2 cup chicken or vegetable stock/broth
6 ounces spaghetti (or any type you like)

Yields 3-4 servings

Preparation Time: 5 minutes -- shrimp bought already peeled and deveined
Cooking Time: Scampi alone is 5 minutes; with incorporated pasta about 12-14 minutes

Parmesan Potato Wedges



Great snack! Munch munch... this recipe calls for 1/2 tbsp of pepper which may be a little too much for some, so if you don't like them to taste really spicy then put only couple of pinches instead. No need for ranch dipping 'cause the combination of the ingredients makes this dish tasty already! Enjoooooyy!!!

INGREDIENTS:
4-5 small baking potatoes
1/3 cup melted butter
1/2 tsp minced garlic
1/2 tbsp Italian seasoning (any kind)
1/2 tbsp pepper
1/4 tsp salt
few drops of hot sauce

Makes about 1 1/2 lbs. of yummy potatoes

Preparation Time: 10 minutes
Baking Time: 25-30 minutes at 425°F
